Apparently, at Sunset Eats at Palmetto Bay, I needed someone to tell me to leave something alone.
At Smashin Down South, I ordered the OG Smash Burger and was encouraged to try it exactly the way they serve it.
Normally, I am the person who will look at a burger and immediately begin negotiations.
Take this off. Add this. No onions. Extra sauce.
This time, I listened.
Nothing came off.
And I am extremely glad I left that burger alone.
The OG Smash Burger worked because everything was clearly designed to be eaten together. Nothing felt random, and nothing made me think, “This would have been better without that.”
But the biggest standout was easily the seasoning.
You could absolutely taste the ground beef, and I want to be clear about that because some people prefer burgers to be more about toppings and sauces than the meat itself. This was very clearly a beef-forward burger.
But that is also where Smashin Down South got it right.
The seasoning became the star without completely covering up the flavor of the beef. It gave the patty enough personality that the burger did not need some ridiculous mountain of toppings or gimmicks to make itself memorable.
A smash burger seems simple until somebody does one badly. Then suddenly you understand how easy it is to end up with meat that is dry, underseasoned or buried under so much sauce that you could be eating anything underneath.
This one knew exactly what it was.
The meat tasted like meat, the seasoning had real presence, and the rest of the burger supported it rather than competing for attention.
As somebody whose natural instinct is to edit everything, the fact that I would not change a thing says plenty.
Foodie Verdict: Order the OG the way they made it. Put the modifications down and let these people cook.
