Chef Hel on Wheels: I Came Back Three Times — That Is the Review

Before I say anything about Chef Hel on Wheels, there is one thing I need to disclose.

This food truck belongs to a family friend.

Now that we have handled that, let me explain why that fact ultimately does not matter very much.

I have already gone back three times.

That is not family loyalty. That is hunger.

My first order from Chef Hel on Wheels at Sunset Eats at Palmetto Bay was the birria tacos, and I very quickly remembered something I already knew: this woman can throw down in a kitchen.

Birria has become incredibly popular, which means there are also plenty of disappointing versions floating around. Sometimes the meat is bland. Sometimes everything is drowning in grease. Sometimes you get something that looks incredible for a social media picture but falls apart the second you actually taste it.

Chef Hel did not give me that problem.

The birria was rich, flavorful and properly seasoned, with the kind of depth you expect when meat has actually been given time and attention instead of being rushed out because there is a line waiting.

And yes, birria tacos are messy.

They are supposed to be.

There is a point where you stop worrying about looking respectable and accept that this meal has now become a full-contact activity. Chef Hel's tacos reached that point very quickly.

What I appreciated most, though, was that the flavor kept bringing me back.

The first visit could have been curiosity.

The second visit could have been confirmation.

By the third visit, we are no longer conducting journalism. I clearly just wanted those tacos again.

That is one of the strongest compliments I can give any restaurant or food truck through Foodie Corner. Reviews are one thing. Repeat business is another.

Chef Hel may be a family friend, but the tacos absolutely had to earn their own praise.

They did.
