Watermelon Summer

Summertime is one of the busiest times of the year for the production of watermelons. It is very common to see farms shipping truckloads of this delicious juicy fruit in the summer months. On a hot summer day our recipes below will be a refreshing and unusual delight made with simple ingredients for even the first time cook.

Watermelon Lemonade

 Watermelon Lemonade

4 cups chopped watermelon

1 ½ cups fresh squeezed lemon juice

6 cups water

½ cup white sugar

In a blender combine all ingredients and blend well. Serve over chilled ice. Easy and refreshing!

Watermelon Salad

Watermelon Salad

5 cups of watermelon cut into bite size pieces

¼ cup chopped fresh mint

¼ cup Feta cheese crumbled

¼ cup red onion chopped (optional)

3 tablespoons olive oil

1 tablespoons white balsamic vinegar

3 cups salad greens

Mix together oil and vinegar. Toss all other ingredients with oil and vinegar mixture. Chill and serve! Delicious and yummy!!

Watermelon Pie

1 package (3 ounces) watermelon gelatin

¼ cup boiling water

1 carton (12 ounces) frozen whipped topping, thawed

1 cup cubed and seeded watermelon

1 graham cracker crust (9 inches)

In a large bowl, dissolve gelatin in boiling water.  Cool to room temperature.  Whisk in whipped topping, fold in watermelon.  Spoon into crust.  Refrigerate for 2 hours or until set.

Queen’s Tip:  Pick a watermelon that has a whitish/yellow patch on it.  That means that it has ripened on the ground.  Pick a wonderful watermelon today!
