Springtime get togethers make us think of enjoying the company of family and friends. Back yard barbecues, flowers blooming, warmer weather and a time of change.

With little effort you can put together these boards of different creamy cheese balls that go well with most fruits and vegetables. Pick vegetables that are in season and are colorful and appealing to the eye. Fruit, vegetable, and cheese ball trays are easy to make and usually have something everyone will like. You can easily arrange these platters the day before the get together just keep it covered with damp paper towel and chilled.  Add assorted crackers just before serving. Enjoy Spring!!

Bacon-Blue Cheese Ball and Almond-Cheddar Ball

Bacon-Blue Cheese Ball

8 ounces cream cheese

4 ounces crumbled blue cheese

4 tablespoons bacon cooked and crumbled.

2 tablespoons fresh parsley chopped fine

1 Scallion chopped

Mix together cream cheese and blue cheese with mixer until smooth. Mix in 3 tablespoons crumbled bacon, chopped parsley and scallions. Form into a ball. Place remaining bacon on top and fresh parsley on sides of ball. Chill and serve. May be frozen to serve later. Freezes nicely!

Almond Cheddar Cheese Ball

8 ounces cream cheese

8ounces Cheddar cheese

4 tablespoons toasted almonds chopped

1 teaspoon paprika

1/3 cup toasted almonds whole for top of cheese ball

1/2 teaspoon paprika for top of cheese ball

Mix together cream cheese, 4 tablespoons toasted almonds, and 1 teaspoon paprika, until well blended. Add cheddar cheese, mix until smooth. Shape in ball and top with 1/3 cup toasted almonds and sprinkle with 1/2 teaspoon paprika on top. Chill at least 2 hours before serving. For a twist on the recipe add 1/4 cup Port Wine to mixture and you will have a Port Wine Cheese Ball. This recipe also freezes well.

Chive-Cream Cheese Ball

Chive Cheese Ball

2 (8 ounce) package cream cheese, softened

2 cups Cheddar cheese, shredded

1 stick butter

2 teaspoons horseradish

1 tablespoon chives, chopped

1 cup nuts, chopped

With mixer, mix all ingredients, except nuts, until well blended and form into a ball. Roll in nuts. Chill and serve with fresh fruit or just crackers.

Queens Tip: Serve these cheese balls with your favorite sparkling spring time drink.
