Mother's Day Brunch

Caring, kind, loving, sweet, humble, dedicated, and patient: these are words that describe our mothers.

What better way to express appreciation for these amazing women in your life, then to cook a special brunch just for them. These Mother’s Day recipes will certainly make your mother feel like a Queen on Mother’s Day.

 QUEEN’S TIP: Our incredible mothers have always made memories for us-make one for yours today.

Brunch Casserole

Brunch Casserole

½ pound bacon

1 cup onion, chopped

1 cup green pepper, chopped

1 cup any other vegetable, chopped

12 eggs

1 cup whole milk

1 (one pound) package of frozen hash browns, thawed

1 cup Cheddar cheese, shredded

Cook bacon and crumble. Sauté onion, green peppers and other veggies.  Beat eggs and milk.  Stir in hash browns, cheese, all vegetables and bacon.  Pour in lightly greased 13x9 inch pan and bake at 350 degrees for 35-45 minutes. Serves 10.

Pecan Mini Muffins

1 cup brown sugar

½ cup all-purpose flour

½ teaspoon baking powder

¼ teaspoon salt

1 cup pecans, chopped

2 eggs, beaten

1 teaspoon vanilla extract

Mix all ingredients. Bake in greased mini muffin pans at 350 degrees 12 to 15 minutes. Makes 18-20 mini muffins.

Fruit Salad

Fruit cup for a Queen with Linda’s famous Lemon Poppy Seed Drizzle

1 cup sliced strawberries

1 cup cantaloupe chunks

1 cup pineapple chunks

1 cup honeydew chunks

1 cup green or red grapes

1 cup blueberries or blackberries

1 cup raspberries for garnish

Mix together and toss lightly into Lemon Poppy Seed Drizzle.   Serves 6 to 8.

Lemon Poppy Seed Drizzle

6 tablespoons salad oil

4 tablespoons honey

1 teaspoon shredded lemon peel

4 teaspoons lemon juice

½ teaspoon poppy seed

 Mix together and drizzle over fresh fruit salad.
