   Veteran’s day is an important day in our lives to honor the men and women who serve this country, so we can enjoy our freedom everyday.  Along with being grateful to them, we know there are families who sacrifice a lot without them.   Proudly display your American flag and give a Veteran a thank you for their service and for the glorious freedom we all share.

Red and White Salad

Red and White Salad

2 cans (15 ounce) white beans, drained and rinsed

2 cups fresh tomato, chopped

1 cup scallions, chopped

¼ cup lite olive oil

1 teaspoon salt

1 teaspoon pepper

Mix and chill. Serves 6.   Delightful, delicious and easy!

Jalapeno Corn Bread

Jalapeno Corn Bread

 1 cup yellow corn meal

 1 cup cream style corn  

 1 cup grated Cheddar cheese

 ½ cup vegetable oil

 ½ cup buttermilk

 1 teaspoon baking soda  

 ½ teaspoon salt

 2 eggs, beaten

 1 Jalapeno pepper, chopped fine

 2 tbsp bacon drippings or oil

Mix all ingredients in a bowl except for the bacon drippings. 

Put bacon drippings in a 9x9 inch pan or preferably a cast iron skillet.  Heat in oven until drippings cover bottom of pan.  Pour batter into pan and bake for 20 to 25 minutes in a 400 degree oven.  Serves 6. 

   This version of Cornbread adds

   a little spice to your meal!

Peppercorn Filets with Blue Cheese Butter on Top

4 to 6 Tenderloin Filets

Seasoning with Salt, fresh ground peppercorns and fresh garlic

Place meat on grill. Cook on grill until desired doneness.

Blue Cheese Butter

1 Cup unsalted butter, softened

4 oz. package of Blue Cheese

Combine butter and cheese until smooth. 

Spoon over filets just before removing from grill.
