Celebrating America

Fireworks, family, Bar-B-Que, parades, picnics and concerts are what we like to think of what the 4th of July means to us.  The 4th of July to our family is a time for the joy we have to celebrate our freedom that this great country affords us.  Being together with friends and watching everyone’s face as they look up and are excited about fireworks, and the blessings of sharing, Independence Day makes this event even more special.

Pulled Pork Sliders

1 (6-8 pound) pork picnic roast

¼ cup fresh parsley, chopped

2 cloves fresh garlic, crushed

3-5 bay leaves, crumbled

1 teaspoon fresh ground pepper

1 teaspoon sea salt

1 small white onion, sliced thin

Place pork in roasting pan. Cover with garlic, parsley, crumbled bay leaves, salt, pepper and onion.  Pour 2 cups of water in bottom of pan.  Cover and bake at 350 degrees for 4 hours or until meat pulls apart easily.  Cool and shred roast into bite size pieces and serve with rolls and your favorite honey mustard sauce.  Yield 16-18 sandwiches.

Patriotic Potato Salad

Potato Salad

½ cup mayonnaise

½ cup ranch style dressing

2 tablespoons prepared mustard

6-8 medium potatoes, peeled, cubed and cooked until tender

3 hard-boiled eggs, chopped

½ cup olives, sliced, green or black

½ cup sweet pickle relish

½ cup green pepper, chopped (optional)

1 cup celery, thinly sliced

½ cup scallions, chopped

3 strips bacon, fried and crumbled

Salt and Pepper

Mix together mayonnaise, ranch style dressing and mustard.  Add potatoes, eggs, olives, relish, green pepper, scallions, bacon and celery.  Fold together and season to taste.  Serves 8

Corn on the Cob

 Easy Corn on the Cob

Place 3 unshucked ears of corn in the microwave and cook 5 minutes on high. Remove from microwave and shuck, then rub with butter and lightly salt.  Repeat until the desired amount of servings are made.  Wrap with in foil to keep warm.  Enjoy, Delicious!

Blueberry Cherry Pie

Blueberry Cherry Pie

1 Ready-made package pie crust roll

1-pint blueberries

½ cup white sugar

2 tablespoons cornstarch

½ teaspoon cinnamon

1 can Comstock Cherry Pie filling

Roll out 1 pie crust.  Place dough in pie pan.  Set aside.  Combine in a bowl blueberries, pie filling, cornstarch, and cinnamon.  Spoon into pie crust. Roll out second crust, place on top of pie and crimp edges to seal crust. Score top of crust to let filling breathe.  Bake at 400 degrees for 45 to 50 minutes.  Cool and serve with ice cream or whipped topping of your choice.

Queen’s Tip:  Use patriotic memorabilia of red, white and blue to decorate for this sizzling event.
