All About Oranges

This time of year South Florida is laden with tree ripened oranges.

This chicken recipe is refreshing and lite spring fare. Orange is a flavor that seems to appeal to most, if not all of us. It is a wonderful way to get in a good dose of vitamin C. This easy Oven Orange Chicken is sure to be a hit with everyone. Serve it over yellow rice and a spoonful of Orange Sauce.

Top it off with a slice of Orange Coconut Cake and you will put a smile on everyone’s face!

Oven Orange Chicken

Oven Orange Chicken

1 whole chicken cut into ready to cook pieces

1/2 cup fresh orange Juice

2 eggs beaten

1 cup bread crumbs

1teaspoon salt

1teaspoon paprika

1 tablespoon grated orange peel

6 tablespoons butter

Mix together beaten eggs and orange juice. Mix together bread crumbs, salt, paprika and orange peel.

Dip chicken pieces in egg orange juice mixture, then breadcrumb mixture. Melt butter in 13 x 9-inch baking pan. Turn chicken in melted butter to coat. Bake 400 degrees for 30 minutes. Turn chicken over and bake another 30 minutes. Serve with yellow rice and Orange Sauce if desired.

Orange Sauce

2/3 cup butter

4 tablespoons sugar

2/3 cup orange juice

1 tablespoon orange rind

Melt butter; blend in sugar, orange juice and orange rind. Cook until sugar dissolves. Serve warm over chicken.

Orange Coconut Cake

Orange Coconut Cake

1 box yellow cake mix

4 eggs, beaten

½ cup vegetable oil

1 can Mandarin orange with juice

1 cup chopped nuts (pecans or walnuts)

Grease and flour a 13 x 9-inch pan. Mix all ingredients in a bowl and bake in 350-degree oven for 25 minutes. Cool.


1 small can coconut

1 medium whipped topping

1 medium can crushed pineapple with juice

1 large box instant vanilla pudding

Mix all ingredients in bowl and spread over cake. Optionally garnish with orange slices and toasted coconut. Chill. Serves 16

Queen’s Tip: Oranges were designated Florida’s official state fruit in 2005, and orange juice is the state beverage.
