   Two things come to our thoughts about Valentine’s Day, Love and Friendship.  Hearts, flowers, chocolate and someone special in our life is how we celebrate the holiday on February 14th, known as Valentine’s Day. We celebrate with cards, flowers, candy and of course, good food.

   These recipes are easy, tasty and will make the day memorable for your special someone.

Strawberry Bread

Strawberry Bread

3 cups white all-purpose flour

1 teaspoon baking soda

1 teaspoon salt

1 tablespoon cinnamon

2 cups white sugar

4 eggs, beaten

1 ¼ cup pecans or walnuts, chopped

2 cups frozen strawberries, thawed

Mix all dry ingredients using a hand mixer. Add all other ingredients until well-combined. Pour into 2 greased loaf pans. Bake at 350 degrees for 60 minutes or until tester comes out clean. Makes 2 loaves.

Chocolate Double Fudge Muffins

Chocolate Double Fudge Muffins

4 blocks semi-sweet chocolate

1 cup melted butter

½ teaspoon salt

1 cup white sugar

1 cup all-purpose white flour

4 eggs

1 teaspoon vanilla extract

2 cups walnuts or pecans, chopped

Melt butter and chocolate in pan. Cool slightly. Beat in sugar, salt and flour. Add eggs one at a time, then vanilla and nuts. Pour into greased (or papered) muffin pans. Bake at 325 degrees for 25 minutes. Dust with powdered sugar. Makes 12 muffins.

Chocolat Chip Marble Pie

Chocolate Chip Marble Pie

2 eggs

½ cup all-purpose white flour

½ cup white sugar

½ cup brown sugar, firmly packed

1 cup butter melted and cooled to room temperature

1 (6oz.) bag semi-sweet chocolate chips

1 cup chopped walnuts (optional)

9-inch pie crust, uncooked

Whipped topping or ice cream (optional)

Beat eggs until fluffy. Add flour, sugar and brown sugar. Blend well. Add butter and blend. Stir in chocolate chips and nuts. Pour into pie crust. Bake pie in 325-degree oven for 50 minutes to 1 hour

(or until set).

Serve warm with preferred toppings.
