In the middle of Summer heat serving sweet refreshing and unusual yummy desserts appeals to all of us.
Fresh seasonal fruits are in abundance in our markets now, so it is no doubt we have all of the ingredients for fun, easy desserts. With ripe berries and juicy watermelon, the recipes below are quick to make. Just three ingredients make this watermelon a colorful, cool treat to serve. Our Blueberry Lemon cake has a sweet, creamy, and smooth texture with a light outer crust.
It’s packed full of fresh blueberries topped off with a light lemon glaze. Serve it with a dollop of whipped cream and a handful of blueberries. Making our Donut Strawberry Shortcake could not be easier and I can assure you it is delicious!
Make it ahead of time, and serve at room temperature when your guest arrive.
4 cups watermelon cut into bite size pieces
2 tablespoons lemon juice
1 tablespoon honey ( optional)
Freeze watermelon chunks until frozen solid.
Process frozen watermelon and lemon juice in processor or blender. Honey is optional.
I left out the honey. It will be slightly like snow.
Serve in a pretty glass or freeze until needed. Refreshing and pretty to serve! Delicious!!
Blueberry Lemon Cake
1. 8 ounce cream cheese cut into chunks
4 eggs beaten
1/3 cup oil
1 box Duncan Hines Butter Recipe Cake mix
1 cup fresh blueberries
1 cup chopped pecans
Mix first 4 ingredients together until well blended. Add in blueberries and nuts, stir well. Pour into greased and floured bundt pan. Bake 325 degrees for 1 hour.
1 cup powdered sugar
3 tablespoons lemon juice
1/2 teaspoon vanilla extract
Warm mixture slightly until smooth consistency, pour over cake. Moist and so good!
Donut Strawberry Shortcake
6 glazed donuts
2 cups strawberries sliced
1 cup whipping cream whipped
To assemble: place donut on plate or tray. Arrange strawberries on top. Top off with whip cream. Easy, festive, and so delicious!
