All of these recipes can be served for your Brunch or even an early evening meal. Dress up your table with fun to make dishes, including our Quiche recipe, salads, and more. Cool and refreshing this chilled Cantaloupe soup can be served in a fancy glass, cup, or small bowl. Top it off with a dollop of Creme Fraiche and a fresh mint leaf. Delicious and beautiful!
Cold Cantaloupe Soup
1 cantaloupe, peeled, seeded and cubed
11/2 cups orange juice
2 tablespoon fresh lime juice
1/4 teaspoon ground cinnamon
Peel, seed and cube cantaloupe and 1/2 cup orange juice in blender or food processor. Cover and process until smooth. Transfer to large bowl. Stir in lime juice, cinnamon and remaining orange juice. Cover and refrigerate for at least one hour. Garnish with mint.
1 ½ cups whipping cream
3 eggs, beaten
1/3 cup scallions, chopped
1 ½ cups Swiss cheese
¼ teaspoon nutmeg
3 slices of bacon, friend and crumbled
1 (9inch) pie crust
Combine all ingredients and pour into a 9-inch pie crust and bake at 350 degrees for 40 minutes or until browned. Serves 6 to 8.
Broccoli Salad with Raspberry Vinaigrette
6 cups fresh broccoli florets, uncooked
8 slices bacon, fried and crumbled
2 cups dried cranberries
1 cup sliced toasted almonds
Mix together all ingredients.
Raspberry Vinaigrette Dressing
1 cup mayonnaise
½ cup red raspberry vinegar
2 tablespoons sugar
Mix and toss over broccoli salad and chill.
